Mulled wine is a popular Yuletide drink with many European cultures, like Sweden&#8217;s <em>gl\u00f6gg<\/em> and the Netherlands&#8217; <em>bisschopswijn<\/em>. Fun fact: hot spiced wine is first attested in 1st century Rome! (<a title=\"Mulled Wine\" href=\"http:\/\/en.wikipedia.org\/wiki\/Mulled_wine\">According to Wikipedia and\u00a0<em>The Oxford Companion to Wine<\/em>, 3rd ed., 2006<\/a>.)<\/p>\n<p>Presently being &#8220;steeped&#8221; in the art of homebrewing, but yearning the delicious, warm, spicy beverage of my youth\u2014er, adulthood\u2014this Christmas season, I thought I&#8217;d take a crack at homebrewing a beer based on the family recipe for Gl\u00fchwein. (1 can) LME<\/li>\n<li>1.5 lb. light DME<\/li>\n<li>1\/2 lb. corn sugar<\/li>\n<li>1\/2 lb. Dark Crystal I malt<\/li>\n<li>2 oz. Blackprinz malt<\/li>\n<li>2 oz. Chinook hops (boil)<\/li>\n<li>1\/2 oz. Saaz hops (aroma)<\/li>\n<li>1 jar Rubenkraut<\/li>\n<li>1\/2 oz. star anise<\/li>\n<li>3-4 sticks of cinnamon<\/li>\n<li>peel of 4 oranges [next time use the meat and compost the peel]<\/li>\n<li>1\/2 oz. cloves [too much]<\/li>\n<li>0.25-0.5 tsp. Remove grain. Add malt extract, Rubenkraut, boiling hops, and boil for 60 minutes. Add anise, cinnamon, orange peel, clove, 0.25-0.5 tsp. Irish moss and boil for 10 minutes. Add aroma hops for 2 minutes. Add wort to 2 gallons cold water in carboy. Top off to 5 gallons. Pitch yeast when room temp.<\/p>\n<p><strong><strong>January 12, 2013 \u2014<\/strong> Brew day<\/strong><br \/>\n<strong>Original Gravity<\/strong> (OG) 1.060 at 75\u02daF (or approx. 1.064 at 60\u02daF)<\/p>\n<p><strong>Personal notes:<\/strong><br \/>\nI forgot to add the Irish moss. Ssh! Don&#8217;t tell anyone! I would have added it with orange peel. Had 1\/2 oz leftover Liberty hops, so I threw it in during the final 2 minutes for extra aroma.<\/p>\n<p><strong>January 24, 2013 \u2014 Gravity Test<\/strong><br \/>\n1.014 at 60\u02daF (or approx. 1.010 at 75\u02daF)<\/p>\n<p><strong><strong>January 26, 2013<\/strong> \u2014 Bottling day:<\/strong><br \/>\n<strong>Final Gravity<\/strong> (FG) 1.012 at 60\u02daF<br \/>\n(1.064-1.012) x 131.25 = 6.825% ABV (<strong>alcohol by volume<\/strong>)<\/p>\n<p><strong>First impressions:<\/strong><br \/>\nStrong citrus aroma. Almost grapefruity. Perhaps too much orange peel contributes to bitterness. Too much clove. Not sweet enough. Can&#8217;t detect R\u00fcbenkraut. Anise barely perceptible. Next time less orange and clove, same cinnamon and anise. Lighter base beer? Different hops?<\/p>\n<p><strong>Addendum &amp; Musings<\/strong><\/p>\n<ul>\n<li>Perhaps wise to add R\u00fcbenkraut at height of fermentation, per <strong>Calagione<\/strong> <em>Extreme Brewing<\/em> 64: &#8220;The later in the process [sugars] are added, the more aroma and flavor they will add to your beer.&#8221;<\/li>\n<li>Use the fruit of the orange and use a grater to enjoy the zest of the orange without the pith. Pith might be <a title=\"Is Orange Pith Good for You?\" href=\"http:\/\/www.foodgenetics.com\/2010\/07\/06\/is-orange-pith-good-for-you\/\" target=\"_blank\">high in vitamin C<\/a>, but it&#8217;s way bitter!
